We do our best to mix the gluten free sourdough on a different day that we mix our regular sourdough, and when we bake, they go on a completely different rack to avoid cross-contamination. We do our best, but please do keep in mind that we are in a kitchen that is not certified and on other days we do use whole grain flour that contains gluten, so we will leave it up to your discretion.
